I used extra-strong vanilla and used about ½ t extra….and added 2 tablespoons of milk, since the batter was really thick….I also melted the butter before I mixed it with the sugars…and I put larger scoops on the baking sheet than it said to….I made these and brought them to work and everyone was freaking out over them! You may add a little coffee as a secondary flavor and also try to substitute half of the sugar you use with brown sugar or if you could get "mascovado" (raw brown sugar), it has a more distinct aroma than regular table brown sugar. Do not substitute entirely with brown sugar coz the cookie might get soft and chewy. Lastly, you may want to bake it on an oven that uses charcoal or fire wood to give it a smokey hint but i think this is a long shot in your area... maybe you can add a little smoke flavor to your batter...
